Oat Pancakes

  • ½ cup flour
  • ½ cup oats
  • 1 Tbs sugar
  • 1 Tbs baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp salt
  • ¾ cup buttermilk
  • 1 tsp vanilla essence
  • 2 Tbs vegetable oil
  • 1 egg


Place flour, oats, sugar, baking powder, bicarbonate of soda, salt in a bowl. Combine buttermilk, vanilla, oil and egg in a separate bowl then add to the dry ingredients. Mix until smooth and even. Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
